When we opened Indigo over a decade ago, our goal was simple — honest, wholesome Indian food made with care. Over the years, that mission became something more. A responsibility. An obsession. To bring people food that is comforting, healthy, and prepared the way it should be. That vision led us here. To Sambar n' Spice. We have never been interested in elaborate presentations or unnecessary flair. Our focus has always been on food that feels real — simple, soulful, prepared with honesty. Much like food cooked at home.
At Sambar n' Spice, that philosophy continues. The conversation, for us, is no longer about whether food is "authentic" or not. It is about serving food that is fresh, balanced, comforting — made with respect for the ingredients and the traditions behind them. My wife Nidhi is the soul behind this vision. Her passion, her patience, and her belief that food should nourish not just the body but the spirit — that is what you taste in every dish. South Indian cuisine remains one of the least represented traditions in the DMV. We are honored to join those already serving it — bringing its flavors, its simplicity, and its richness to Washington, DC.
